1851 French census (at http://www.archivespasdecalais.fr, Oct 2011): in Rue de la Flottille, Boulogne sur Mer, 6th section), Minter Henry, cafetier, married, 34, English, Protestant) and GRENDFIELD (sic) Catherine, la femme, married, 31, English, Protestant. Possibly in the same household was WRENDFIELD (sic) George, domestique, single, 40, English, Protestant.
1856 French census (at http://www.archivespasdecalais.fr, Oct 2011; Recensement de population des sections 6, 7, 8, 9 , 11, 10 - page 41): in Quai de la Flottille, Boulogne sur Mer, 6th section), Minter Henry, hotelier, married, 39, GREENFIELD Catherine, la femme, married, 35 and Minter Catherine, daughter, 5 months. There were also 4 domestic staff and two guests, the port police commissaire and his wife.
Daughters Euginie and Catharine were bapised in January 1862. At that time Henry's address was 10a Mount Street, occupation hotel keeper.
Emigrated to Australia in 1862. A publican at the Criterion Hotel, Young, NSW, Australia. It would appear that his children either stayed in the UK or returned there.
The Daily Southern Cross, Auckland, NZ of 19 April 1876 (repeating news from NSW of 11 April) reported that "Mr. H. Minter had consigned to him from Melbourne some English hares, which he intends to let loose on his estate near Young."

The NSW State Records Register of Auriferous Leases shows that Henry applied for leases at Young 71/6 on 30 May 1881 (date of possession 26 May 1881) and Young 83/3 on 30 March 1883 (took possession on 22 March 1883). Apparently in partnership with Robinson (Warden). Also for a lease for Barmedan 7 on 30 August 1883 (took possession on 23 August 1883), with G H Green.
